Easy Frozen Berry Treat

With temperatures in the triple digits this week, we have been looking for ways to stay cool while staying healthy too!

I recently acquired some fresh cottage cheese from a local farm, and while I don’t usually care for cottage cheese alone, I wanted to use it in a tasty way so we could all enjoy the benefits!

I wanted to keep the cheese in its current state without cooking out any of the goodness, so lasagna or a hot soup was not an option.  I had some berries in the freezer that we had picked earlier this year, so I decided to combine them and create a tasty treat!

Here’s what we used!

  • 1 cup water
  • 3 cups frozen berries (we used a combination of strawberries, blueberries, and blackberries)
  • 1/4 c lemon juice
  • 2 TBL real maple syrup
  • 1 pint cottage cheese (organic, whole-fat cheese)

We blended it all together in my Vitamix and then ate it with a spoon!  The berries made it refreshing and delicious, and the cottage cheese added a lot of protein for a filling snack.

My kids declared it super yummy and delectable, so it was definitely a hit here!

The recipe is easy to tweak, so feel free to add more/less water or maple syrup to get the consistency and sweetness you desire!
